Oatmeal Banana Date Muffins

Emily gave me some silicone muffin cups and I wanted to use them tomake something she could enjoy. I wanted a simple & hearty recipe that used oats. I found one and modified it a little [1 cup oats & 1 cup oat flour]. Recipe

I didn't use any refined sugar. I can get these finely chopped dates at the co-op that work great as a sugar substitute. I also chopped some whole dates into pieces. When I was done mixing, I realized this was vegan, too.

 The new muffin cups work great. No sticking.

The muffins were done baking and my phone rang. It was Dave with the fat bike wheels. I met him in Superior. Super nice guy & he works at Quality Bike Products in MPLS. The wheels look great & I got a great deal. Super wide rims = Flotation

The building on the left is the wonderful cabin with a nice wood stove. A great place to warm up. The middle building is the wood shed and  on the right is the very nice outhouse. Some great trails that connect with the Birkie system.

 There is always dripping water here. This is the bridge under 9th Ave. This ice was almost 3ft tall.

I needed to burn off some energy after work. I bundled up with my warmest gear and hiked 1/2 way up Chester Creek. I still didn't warm up much but it was good to be outside. The walk home was cold with a wind in my face. I am glad I live in a nice warm home.

 A nice overlook area in Chester Creek. It would be a nice spot for lunch/picnic

 1-12-13 ... Rudy organized a ride up Amity Creek and a good crowd of people showed up. My SS didn't last long before I had a ripped valve stem on the rear. I fixed it and came back for more, but it happened again. I ended up hiking around Lester Park for over an hour and doing some exploring.
