February

2-24-13
The fat bike is built

2-22-13
A Sugar Hills Ski
This is a ski wagon [6 pairs of skis]
The old lodge/apartment building. Sad that this downhill ski resort had to shut it's doors more than 30yrs ago.

 Super Frosty out

Rudy and I decided to skate ski the Thunder Loop. Man, I hadn't been on these hills in a long time. Really exhausting with 6" of fresh snow. Rudy expression sums it up.

This view reminded us of Duluth. A large hill with a lake.

Refreshing

2-18-13
Emily's Parents Visit

A gluten free pizza for lunch with green pepper, artichoke hearts, dried tomato, olives, & dried zucchini.

It was really good and the crust is super easy to make.

2-16-13 Saturday
By the Brule river
After a morning of fat bike work I felt exhaust [of working on bikes]. I packed up my things and went to Brule to ski the Afterhours trails.
The shorter log had deer hair all over it.

The deer nibbled on the ski trail sign.

The nice little warming house at the trail head.

2-12-13 Tuesday
Had a great time skiing at Lester. Explored the outer most loops on the skate skis and worked up an appetite. Such nice trails out there...so many hills.
I was really craving a dinner that was semi light but also fulfilling. I boiled up some wheat noodles and dug into the freezer for some green beans, shell beans, and chick peas. Added some pepper flakes and herbs that equaled a super awesome dinner.

2-10-13 Sunday
Emily had baked a really great squash the night before and had plenty of leftovers. We made some HM crackers today and decided to combine the two into an amazing appetizer/dinner.
HM Cracker
Squash
Spinnach
Goat Cheese
HM Hot Sauce
Once assembled...bake for 10min.
This would be a great treat at a party.

2-9-13 Saturday
Ready to take on the 10K loop

So much fluff

We made it to the overlook. Not much to see, but we are on a big hill. So much climbing.

The magic picnic table [standing up at an odd angle]

Cute outhouse

Done with the 10K...time to go to the 5k loop after some monster cookies
[they equal power for our legs and arms]

Off the trail in Washburn. We stopped at Coco Bakery for a look. So many amazing baked goods + meal options. Breads, scones, cake, muffins, cookies. They even have a variety of Gluten Free items. I bought some cin/raisin bread that is wonderful.

Tetzner's Dairy
A store on the actual farm with cheese, milk, eggs, and homemade icecream + ice cream sandwiches. I pick up some smoked cheddar and munster cheese. The owner, a man in his late 70's, was stocking the bagged milk.

On our way into Ashland...a stop at the Artesian well to fill our bottles

The nice little co-op in Ashland with the Black Cat coffee house next door. Both a great places! The black cat has an amazing hummus wrap.

2-7-13 Thursday
I dusted off the bread machine for a multi herb whole wheat loaf of bread. I'm very happy with the way it came out.

2-4-13 Monday
I wanted to bake something/cook something but didn't need any more sweets of bread. I did a a little searching of tortilla recipes and went to work.

Super simple. Water, Flour, Salt, Oil, Baking Soda

Rolling

One done

A lefse grill would equal large uniform tortillas. I don't mind the weird shapes.

Cooling off
I will definitely make more in the future and I may never need to buy them ever again. Another cost savings
[I gave up buying soy milk/almond milk and only use water on cereal - chaa-ching]

2-2-13 Ski

The lovely ski trails at Korkki Nordic. Some scary fast hills out here today [snow conditions].

1-29-13 Wheat Berries

Wheat Berries
I had purchased these at the co-op and had them in my pantry for awhile and really wanted to cook with them. I boiled the berries for 50min [you can also soak overnight] and cooked up some Brussels sprouts and onions in the skillet. The berries are a nice change and are a little chewy. It is like pasta & rice combined. A nice change of pace.
