May 2013

5-17-13 Friday
Did some quick organizing before leaving around 5pm from Duluth. Rain was worrying me a bit but decided to go on an adventure.

I made it to Tofte and stopped at COHO (very nice cafe) for a berry ice cream cone

I made it to the rustic Cabin after 8pm. It was still light out, so I decided to go to the lake to explore. Going thru Grand Marais brought back some great memories from last September.
The beach has changes a lot in 7 months. Emily slept down here & there were no shelves of rock.

5-18-13
I slept on the porch & fell asleep to a nice moon and calm wind
I made it down to the peninsula in the morning and did some hiking around. Some great rocks
I made it across the border and stopped at Thunder Oaks Cheese shop (Dutch)
All Gouda cheese, but so many different flavors
They make a lot of cheese. (I bought some Cumin Cheese and Black Pepper cheese - great stuff)
I went for a trail run at The Bluffs and had some lunch in the parking lot. A nice view of TB and Sleeping Giant park.

 The Growing Season
Had an awesome meal here on Saturday night. Sprouted Lentils are super!

5-19-13 Sunday
More rain today but I had a nice drive to kakabeka falls provincial park. I did a hike down the river at back. Felt good to stretch my legs.

Back across the border in MN. I stopped at Chicago bay for a look at this dilapidated dock I stopped on the way north. A neat area.

I don't think they are actually going to fix the dock.

The rain let up just in time for Grand Marais! I was able to ride trials and bumped into Leslie who was going to TB for a running race. Super thankful for the dry weather.

5-11-13 Sunday
The park point trail race had taken place out here on Wednesday and I was in awe of the scenery. I knew I should bring Emily out to see this piece of Duluth. There was a strong wind out of the North so we had an easy bike out. I found a bastard file at an estate sale for 25cents. We walked the trail for awhile and took small trail towards the lake and enjoyed a banana protein bar. We will have to run or walk to the end some day soon.

The ride back towards Duluth was a tough one with gusty winds. But...we were both dreaming of a nice sandwich at Northern Waters Smokehaus.

Emily had the Cajun Fin [House-smoked Cajun salmon, green onion cream cheese, roasted red peppers, pepperoncini and lettuce on stirato. One of our bestsellers.]

I had the salad [A bed of lettuce supports the layers of pickled ginger, cilantro, cucumber, Marcona almonds, shredded cabbage, carrot, and a healthy serving of our traditional smoked salmon. We finish this little beauty with sesame vinaigrette and dot it with wasabi mayo and chili sauce.]

I had some nice lettuce plus cilantro so we decided on taco salads. A Super satisfying dinner.

5-8-13 Wednesday
A nice loaf of sour dough bread. It rose nicely, but maybe too much...because it should have rose more in the oven. It tastes great.

Super veggie pizza.

5-6-13 Monday
A beautiful day after so much snow/rain/gloom. Made a delicious pasta dinner with lots of veggies [most from the dumpster]. Hopped on the Echo and coasted down the hill to the ledges for a trials session. Two interesting ships out in the harbor and perfect weather for trials. The beach has been transformed after the 40mph winds we had a few weeks ago.
